The Occurrence of Citric Acid

This compound exists in a great variety of fruits and vegetables but undoubtedly is most predominant in citrus fruits, such as lemons, grapefruits and oranges. In these fruits, citric acid can reach concentrations around 8-10% of dry weight, but these values range widely depending on the species and cultivar.

The Role of Citric Acid in Metabolism

Citric acid, or its conjugate citrate, is an essential component participating in various physiological processes, including oxidation of fats, carbohydrate and proteins. As such, it is involved in the production of over 60% of the energy derived from food. In 1953, Hans Adolf Krebs, from the University of Sheffield, was awarded the Nobel Prize in Medicine for the discovery of what is now known as the Krebs Cycle or the Citric Acid Cycle.Basically, the Citric Acid Cycle is a series of reactions to generate energy in the form of adenosine triphosphate (ATP). In the process, citric acid is the main player as it is consumed and then regenerated to complete the cycle.
