The Early History of Acetic Acid
Vinegar was discovered early in civilisation as the result of the bacterial fermentation of wine. By the 3rd century BC, acetic acid was already a common ingredient in many concoctions formulated by alchemists. The first reactions included the production of several pigments used by artists. These included white (lead carbonate) and green (copper(II) acetate).However, it took many centuries for researchers to develop ways to distil and purify acetic acid from metal acetates, in particular copper(II) acetate. Finally, in 1845, chemist Hermann Kolbe successfully synthesised acetic acid for the first time, starting from inorganic compounds.
