Chemical and Physical Properties of Sodium Metabisulphite for Analytical Use

  • Alternative names: sodium pyrosulphite, sodium disulphite
  • Molecular formula: Na2O5S2
  • Molecular weight: 190g/mol
  • Appearance: white to yellow dry powder with a characteristic sulphur dioxide odour
  • Boiling point: decomposes
  • Melting point: above 300 degree Fahrenheit it decomposes
  • Solubility: soluble in water and glycerol, slightly soluble in alcohol
  • Stability: oxidises to sulphate if exposed to water or air
  • Decomposition: decomposes to sodium sulphate at high temperatures, releasing sulphur and sodium oxides
  • pH: aqueous solutions have acidic properties


How safe is Sodium Metabisulphite?

  • Fire hazard: not combustible
  • Exposure: Can cause redness and pain if in contact with eyes and skin, and it may result in abdominal pain, vomiting and respiratory difficulties if inhaled or ingested.
  • Chemical hazards: this compound can release toxic fumes on decomposition, and reacts violently with oxidants and acids
  • First aid measures include immediate washing of affected area with copious amounts of water if in contact with skin or eyes. If inhaled or ingested give patient water to drink and seek medical help.
  • In case of fire involving sodium metabisulphite the best option is to use chemical, dry sand or carbon dioxide fire extinguishers. Water should not be applied directly to the flames, but can be used as a distance to control the spread of the fire.

What is Sodium Metabisulfite?

Alternatively spelt metabisulfite, sodium metabisulphite is an inorganic compound commonly used as a preservative and disinfectant agent. While it still has a wide range of uses, this compound is slowly being replaced with alternative substances due to its toxic by-products.

One example is its reaction with water, strong acids (reaction 1) or its behaviour at high temperatures (reaction 2). These reactions result in the production of sulphur dioxide (SO2), a pungent and unpleasant gas that can be toxic.

Reaction 1: Na2S2O5 + 2 HCl → 2 NaCl + H2O + 2 SO2

Reaction 2: Na2S2O5 → Na2SO3 + SO2

How is Sodium Metabisulphite Prepared?

This compound can be prepared by mixing sodium bisulfite and sulphur dioxide in a saturated solution. This is then followed by evaporation, leaving behind sodium metabisulphite.

Uses and Applications

While this compound has an array of applications, from precipitating gold from auric acid to testing for sickle cell anaemia, its two most common applications are in the food and cleaning industry:

  • Food Additive: with the E-number E223, this compound is commonly used as a preservative and antioxidant in many foods. However, it can cause allergic reactions and respiratory problems, which can be especially dangerous to those who suffer from asthma or any other chronic condition
  • Cleaning Agent: it can be used industrially to clean and sanitise large equipment. It is used in homebrewing and winemaking to do the same thing. Sodium metabisulphite is also used in reverse osmosis membranes and it can also eliminate chloramine in drinking water
