What is sodium metabisulphite?
Also called sodium pyrosulphite, sodium metabisulphite is an inorganic compound commonly used as a preservative and disinfectant agent. Despite its still wide uses, this compound is slowly being replaced with alternative products, due to toxic by-products. One example is its reaction with water, strong acids (reaction 1) or in high temperatures (reaction 2), resulting in the production of sulphur dioxide (SO2), a pungent and unpleasant gas that can be toxic.
Reaction 1 Na2S2O5 + 2 HCl → 2 NaCl + H2O + 2 SO2
Reaction 2 Na2S2O5 → Na2SO3 + SO2
How is sodium metabisulphite prepared?
This compound can be prepared by mixing sodium bisulphite and sulphur dioxide in a saturated solution, followed by evaporation leaving sodium metabisulphite behind.

What are the most common uses for sodium metabisulphite?
Food additive: the most common use for sodium metabisulphite is as a food additive. Those sensitive to sulphites may have an allergic reaction, causing respiratory problems potentially dangerous in asthmatics or patients with previous conditions. This compound is used in many different food products, including wine and beer.
Cleaning agent: Can be used industrially to clean and sanitise large equipment
Water treatment: This compound is used in reverse osmosis membranes and it can also be used to eliminate chloramine in drinking water
