About Citric Acid

  • Exists as anhydrous or monohydrate forms: the water-free version crystalises hot water, while the water-containing form crystalises from cold water
  • Decomposes at temperatures above 175°C by losing carbon dioxide and water
  • Solubility: soluble in water, ethanol, ether and ethyl acetate; insoluble in toluene, benzene, and chloroform
